Preparation:
Preheat the oven to 180°C/350°F/Gas 4.
Place the flour into a large mixing bowl. In a small pot heat up the honey over a low heat. Once the honey is hot add it to the flour and mix until everything is well combined. Leave it in a cold place to cool completely.
Place the flour and honey mix onto a marble countertop or a board. Add the rest of the ingredients and knead firmly until everything is combined. Roll the dough in one direction only, until about 0,5 cm thin.
Line a large baking tray with baking paper. Cut various shapes out of the pastry and place them onto the tray. Bake for 15 minutes in 180°C.
Icing: Break a 100g of dark chocolate and place into a heatproof bowl. Sit over a pan of simmering water and allow the chocolate to melt, stirring occasionally. Add the double cream and stir constantly for another 2-3 minutes.
Cover the cookies with the icing and allow it to cool completely.

2 cup plain flour
100g sugar
1 egg yolk
125 g butter (room temp.)
1/2 tsp baking soda
1 tsp ground cinnamon.
1/2 tsp ground ginger.
1/2 tsp ground nutmeg.
1/2 tsp ground cloves.
Icing:
100g dark chocolate
2 tbs double cream
