SZARLOTKA

Szarlotka is a Polish take on a traditional apple crumble with a grated pastry top. Delicious with vanilla ice cream.

Preparation:

 

Make sure all the indigents are at room temperature. Preheat the oven to 180°C/350°F/Gas 4. Brush 20 x 25cm baking tray with  butter to lightly grease and sprinkle with a pinch of plain flour.

 

Peel and dice the apples and put into a glass bowl. Add 2tbsp of vanilla sugar and 1 tsp of cinnamon. Leave aside until the apples release juice. 

 

Pastry: Sift the flour onto a marble countertop or a board. Add  diced butter, sugar and egg yolks. Knead firmly until all well combined. 

 

Cut off 1/3 of the pasty, cover it with cling film and leave to rest for 20 mins in the freezer. Roll the rest of the pastry in one direction only, until about 20 x 25cm. Keep the edges straight and even. Line the pastry sheet inside the prepared baking tray. Lay out the apples on top of it leaving extracted juice at the bottom of the bowl. Grate the frozen pastry on top of the apples. 

 

Bake in preheated oven for 30 minutes or until golden brown. Once ready leave the cake to cool and sprinkle with icing sugar.

-100g sugar

-1kg apples

-2tbsp sugar

-1tsp cinnamon
